Ingredients

  • 180 grams Rolled oats
  • 120 grams Almond flour
  • 100 grams Coconut sugar
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 110 grams Coconut oil, melted
  • 1 teaspoon Vanilla extract
  • 300 grams Mixed berries (such as blueberries, raspberries, and blackberries)
  • 60 milliliters Maple syrup
  • 1 tablespoon Lemon juice
  • 2 tablespoons Cornstarch

Directions

Step 1

Preheat your oven to 350°F (175°C) and line an 8x8 inch (20x20 cm) baking dish with parchment paper.

Step 2

In a large bowl, combine the rolled oats, almond flour, coconut sugar, baking powder, and salt. Stir until well mixed.

Step 3

Add the melted coconut oil and vanilla extract to the dry ingredients. Mix until the mixture clumps together and forms a crumbly dough.

Step 4

Press about 2/3 of the mixture firmly into the prepared baking dish to form an even base layer.

In another bowl, combine the mixed berries, maple syrup, lemon juice, and cornstarch. Gently mix to coat the berries without crushing them.
