Ingredients

  • 2.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 1 cup vegan butter, softened
  • 1 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 1 tablespoon flaxseed meal
  • 2.5 tablespoons water
  • 2 tablespoons almond milk
  • 1.5 cups powdered sugar
  • 0.5 cup vegan butter, softened (for frosting)
  • 1 teaspoon vanilla extract (for frosting)
  • 2 tablespoons almond milk (for frosting)
  • 0 as needed natural food coloring (optional)
  • 0 as needed sprinkles (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Step 2

In a small bowl, mix the flaxseed meal and water to create a flax egg. Let it sit for 5 minutes to thicken.

Step 3

In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Set aside.

Step 4

In a large bowl, beat the softened vegan butter and granulated sugar together using an electric mixer until light and fluffy, about 2-3 minutes.

Step 5

Add the vanilla extract, flax egg, and almond milk to the butter mixture, beating until well combined.

Step 6

Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined. Do not overmix.

Step 7

Using a tablespoon or a cookie scoop, form dough balls and place them on the prepared baking sheets, spacing them about 2 inches apart.

Step 8

Flatten each dough ball slightly with the palm of your hand or the bottom of a glass.

Step 9

Bake for 9-11 minutes, or until the edges are lightly golden. The centers will still look a bit soft.

Step 10

Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Step 11

While the cookies cool, prepare the frosting. In a medium bowl, beat together the softened vegan butter, powdered sugar, vanilla extract, and almond milk until smooth and creamy.

Step 12

If desired, mix in a few drops of natural food coloring until the desired color is achieved.

Step 13

Once the cookies are completely cool, spread a generous amount of frosting on top of each cookie.

Step 14

Add sprinkles, if using, for an extra festive touch.

Step 15

Allow the frosting to set slightly before serving or storing in an airtight container.
