Ingredients

  • 200 grams Extra firm tofu
  • 2 tablespoons Nutritional yeast
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Black salt (Kala Namak)
  • 0.25 teaspoon Garlic powder
  • 0.25 teaspoon Paprika
  • 2 tablespoons Olive oil
  • 2 slices Vegan cheese slices
  • 2 tablespoons Soy milk

Directions

Step 1

Drain the extra firm tofu and pat it dry with a clean towel to remove excess moisture.

Step 2

Cut the tofu into half-inch thick slices; aim for two large slices that mimic the shape of a fried egg.

Step 3

In a small bowl, mix the nutritional yeast, turmeric, black salt, garlic powder, and paprika together.

Step 4

Heat 2 tablespoons of olive oil in a non-stick frying pan over medium heat.

Step 5

Once the oil is hot, carefully place the tofu slices into the pan.

Step 6

Sprinkle half of the spice mixture evenly across one side of the tofu slices.

Step 7

Cook the tofu for about 4-5 minutes until the bottom is golden brown, then flip the slices.

Step 8

Sprinkle the remaining spice mixture on the second side of the tofu and cook for another 4-5 minutes.

Step 9

Lower the heat to medium-low and place a slice of vegan cheese on top of each tofu slice.

Step 10

Add 2 tablespoons of soy milk to the pan, which helps in melting the cheese through steam.

Step 11

Cover the pan with a lid and let the cheese melt for about 2 minutes.

Step 12

Once the cheese has melted, remove the vegan fried eggs from the pan.

Step 13

Serve immediately as part of a breakfast sandwich, on toast, or with your choice of side.
