Ingredients

  • 2 cups Brown rice
  • 4 cups Water
  • 2 tablespoons Sesame oil
  • 1 medium Onion, chopped
  • 3 cloves Garlic, minced
  • 1 medium Carrot, diced
  • 1 medium Bell pepper, diced
  • 1 cup Frozen peas
  • 3 tablespoons Soy sauce
  • 3 stalks Green onions, chopped
  • 12 ounces Tofu, firm and cubed
  • 0.5 teaspoon Ground black pepper
  • 0.5 teaspoon Salt
  • 1 tablespoon Sesame seeds

Directions

Step 1

Cook the brown rice: Rinse the rice under cold water. In a medium-sized pot, combine the rice with 4 cups of water. Bring to a boil, reduce heat to low, cover, and simmer for about 30 minutes or until tender and water is absorbed. Fluff with a fork and set aside.

Step 2

In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat. Add the cubed tofu and cook until golden brown on all sides, approximately 8-10 minutes. Remove tofu from the skillet and set aside.

Step 3

In the same skillet, add the remaining tablespoon of sesame oil. Sauté the chopped onion for 2-3 minutes until it becomes translucent.

Step 4

Add minced garlic, diced carrots, and bell pepper to the skillet. Stir-fry for about 5 minutes until the vegetables begin to soften.

Step 5

Add the peas and cooked tofu back into the skillet. Stir-fry everything together for another 2 minutes.

Step 6

Add the cooked brown rice to the skillet and mix well with the vegetables and tofu.

Step 7

Pour soy sauce over the rice and vegetables, then sprinkle with ground black pepper and salt. Stir everything until evenly coated and heated through.

Step 8

Sprinkle chopped green onions over the top and mix gently.

Step 9

Garnish with sesame seeds before serving.
