Ingredients

  • 1 cup All-purpose flour
  • 1.5 cups Water
  • 1 tablespoon Cornstarch
  • 0.25 teaspoon Turmeric powder
  • 0.5 teaspoon Salt
  • 2 tablespoons Cooking oil
  • 3 Garlic cloves, minced
  • 1 medium Onion, chopped
  • 2 medium Carrots, julienned
  • 1 cup Green beans, sliced thinly
  • 2 cups Cabbage, shredded
  • 1 block Firm tofu, drained and cubed
  • 2 tablespoons Soy sauce
  • 0.25 teaspoon Ground black pepper
  • 1 cup Bean sprouts
  • 8 leaves Lettuce leaves
  • 0.5 cup Chopped roasted peanuts

Directions

Step 1

In a bowl, combine flour, water, cornstarch, turmeric, and salt. Mix until smooth to form the batter for the wrappers.

Step 2

Heat a non-stick pan over medium heat. Pour 1/4 cup of the batter into the pan and spread it to form a thin crepe. Cook for about 2-3 minutes or until edges start to peel off the pan. Repeat with the remaining batter. Set wrappers aside.

Step 3

In a large wok, heat oil over medium heat. Add garlic and onions, sauté until onions are translucent.

Step 4

Add carrots, green beans, and cabbage to the wok. Stir-fry for 4-5 minutes until vegetables are tender-crisp.

Step 5

Add tofu cubes and cook for another 2 minutes. Stir in soy sauce and black pepper.

Step 6

Toss in bean sprouts, cook for an additional minute, then remove from heat. Let cool slightly.

Step 7

Place a lettuce leaf on each wrapper. Add 2-3 tablespoons of the cooked filling on top, then sprinkle with chopped peanuts.

Step 8

Fold both sides of the wrapper over the filling and roll it up tightly.

Step 9

Serve the fresh lumpia immediately with your favorite dipping sauce.
