Start by shucking the corn if using ears of corn. If using canned corn, drain it well. Bring a pot of water to a boil and add the corn kernels. Cook for about 3-5 minutes until just tender. Drain the corn and rinse with cold water to stop the cooking process.
Meanwhile, dice the cherry tomatoes into small pieces and place them in a large mixing bowl.
Remove seeds and membranes from the red bell pepper to keep the salsa mild. Finely chop the bell pepper and add it to the bowl with tomatoes.
Peel and finely dice half of a red onion, adding it to the salsa mixture.
For a spicy kick, slice the jalapeño pepper in half, remove the seeds and membranes, and finely chop the remaining flesh. Add it to the mixing bowl. If you prefer a milder salsa, use only half or omit entirely.
Wash and roughly chop fresh cilantro leaves. You should have about half a cup. Add this to the mixing bowl with the other vegetables.
Cut the lime in half and squeeze the juice over the salsa mixture. Stir in the salt and black pepper to taste.
Gently mix all the ingredients together until well combined. Adjust seasoning as needed.
Let the salsa sit for at least 15 minutes to allow the flavors to meld together. Serve immediately or refrigerate for up to 2 days.
