  • 1 cup basmati rice
  • 2 tablespoons coconut oil

  • 4 cardamom pods
  • 3 cloves
  • 1 teaspoon turmeric powder
  • 1 medium, diced carrot
  • 1 cup green peas
  • 2 cups vegetable broth
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup, chopped fresh cilantro

Directions

Step 1

Rinse the basmati rice under cold water until the water runs clear and set aside to drain thoroughly.

Step 2

In a large pan, heat the coconut oil over medium heat. Once hot, add the chopped onion and sauté for 3-4 minutes until translucent.

Add the minced garlic and ginger, cooking for another 1-2 minutes until fragrant.

Stir in the cumin seeds, cinnamon stick, cardamom pods, and cloves. Sauté for 1 minute to release their aromas.
