Ingredients

  • 1 cup dried fava beans
  • 4 cups water
  • 2 tablespoons olive oil
  • 3 medium garlic cloves, minced
  • 2 tablespoons lemon juice
  • 1 cup vegan yogurt
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped
  • 1 cup cherry tomatoes, halved
  • 0.5 cup cucumber, diced

Directions

Step 1

Rinse the dried fava beans thoroughly under cold water. Place them in a bowl, cover with water, and soak overnight or for at least 8 hours.

Drain and rinse the soaked fava beans. In a medium pot, add the beans and 4 cups of water. Bring to a boil over medium-high heat.
