Preheat a grill or grill pan over medium-high heat.
Cut each peach in half and remove the pit. Brush each half with 1 tablespoon of olive oil.
Place the peaches cut side down on the grill. Cook for about 4-5 minutes, or until grill marks appear and they start to soften. Flip and grill for another 4-5 minutes on the other side.
While the peaches are grilling, prepare the vinaigrette by whisking together balsamic vinegar, maple syrup, Dijon mustard, salt, and pepper in a small bowl.
Once peaches are done, remove them from the grill and let them cool slightly. Slice the grilled peach halves into quarters.
