Ingredients

  • 4 Fresh peaches
  • 2 tablespoons Olive oil
  • 4 cups Mixed salad greens
  • 1 Avocado, sliced
  • 0.5 Red onion, thinly sliced
  • 1 cup Cherry tomatoes, halved
  • 0.25 cup Almonds, sliced
  • 2 tablespoons Balsamic vinegar
  • 1 tablespoon Maple syrup
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Preheat a grill or grill pan over medium-high heat.

Step 2

Cut each peach in half and remove the pit. Brush each half with 1 tablespoon of olive oil.

Step 3

Place the peaches cut side down on the grill. Cook for about 4-5 minutes, or until grill marks appear and they start to soften. Flip and grill for another 4-5 minutes on the other side.

While the peaches are grilling, prepare the vinaigrette by whisking together balsamic vinegar, maple syrup, Dijon mustard, salt, and pepper in a small bowl.
