  • 1.5 cups All-purpose flour
  • 1 tablespoon Baking powder
  • 0.5 teaspoon Baking soda
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Salt
  • 0.5 cup Coconut sugar
  • 0.5 cup Applesauce
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Apple cider vinegar
  • 0.25 cup Pure maple syrup
  • 0.25 cup Vegan butter, melted

Directions

Step 1

Preheat your oven to 350°F (175°C). Lightly grease an 8x8-inch baking pan or line it with parchment paper.

Step 2

In a small bowl, combine the Fiber One cereal and almond milk. Set aside to allow the cereal to soften while preparing other ingredients.

Step 3

In a large mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.

Step 4

In another bowl, mix the coconut sugar, applesauce, vanilla extract, apple cider vinegar, maple syrup, and melted vegan butter. Stir until well combined.

Step 5

Add the softened Fiber One cereal and almond milk mixture to the wet ingredients and mix well.

Step 6

Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix.

Step 7

Pour the batter into the prepared baking pan, spreading it evenly.

Step 8

If desired, sprinkle extra cinnamon or a handful of chopped nuts on top for added texture and flavor.

Step 9

Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.

Step 10

Allow the cake to cool in the pan on a wire rack for at least 20 minutes before slicing and serving.
