Ingredients

  • 3 cups Ezekiel sprouted grain flour
  • 1 cup Whole wheat flour
  • 1 packet Instant dry yeast
  • 1 teaspoon Salt
  • 1 teaspoon Ground cinnamon
  • 1.5 cups Warm water
  • 2 tablespoons Maple syrup
  • 2 tablespoons Olive oil
  • 1 cup Raisins
  • 2 tablespoons Chia seeds
  • 6 tablespoons Water (for chia seed gel)

Directions

Step 1

In a small bowl, combine 2 tablespoons of chia seeds with 6 tablespoons of water. Stir well and let sit for 10 minutes to form a gel-like consistency.

Step 2

In a large mixing bowl, whisk together the Ezekiel sprouted grain flour, whole wheat flour, instant dry yeast, salt, and ground cinnamon.

Step 3

In another bowl, mix the warm water, maple syrup, and olive oil until well combined. Gradually add the liquid ingredients to the dry ingredients, stirring continuously.

Step 4

Once the dough comes together, add the prepared chia seed gel and knead for about 5 minutes until the dough is smooth and elastic. You may use a stand mixer with a dough hook attachment for this step, if preferred.

Step 5

Fold in the raisins into the dough, ensuring even distribution.

Step 6

Form the dough into a ball and place it in a large greased bowl. Cover with a damp cloth or plastic wrap and let it rise in a warm area for about 1 to 1.5 hours, or until the dough has doubled in size.

Step 7

Preheat your oven to 375°F (190°C). Grease a 9x5-inch loaf pan.

Step 8

Once the dough has risen, gently punch it down and shape it into a loaf. Place the loaf in the prepared pan, cover it, and let it rest for another 15-20 minutes.

Step 9

Bake the loaf in the preheated oven for 30 to 35 minutes, or until the bread is golden brown and sounds hollow when tapped.

Step 10

Remove the bread from the oven and let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Step 11

Slice and enjoy your Vegan Ezekiel Raisin Bread plain or with your favorite plant-based spread!
