  • 1 large, finely chopped Onion
  • 4 cloves, minced Garlic

  • 2 tbsp Berbere spice
  • 2 tbsp Tomato paste
  • 500 ml Vegetable broth
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 1 tbsp Lemon juice
  • 2 tbsp, chopped, for garnish Parsley

Directions

Step 1

Clean the mushrooms with a damp cloth and cut them into quarters.

In a large pot, heat olive oil over medium heat.

Add the chopped onions and sauté until they become soft and translucent, about 5-6 minutes.

Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.

Add the berbere spice and tomato paste to the pot, stirring well to coat the onion mixture. Cook for 2 minutes to bloom the spices.
