  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 8 small Corn tortillas
  • 2 cups Enchilada sauce
  • 1 cup Vegan shredded cheese
  • 0.25 cup Fresh cilantro, chopped (for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.

Heat the olive oil in a large skillet over medium heat. Add the diced onion, red bell pepper, and zucchini, and sauté for 5-7 minutes until the vegetables are tender.

Add the minced garlic and cook for an additional minute until fragrant.
