In a small bowl, combine the flaxseed meal and water to make a flax egg. Stir well and let it sit for 5-10 minutes until it thickens.
In a large mixing bowl, combine the whole wheat flour, rolled oats, instant yeast, and salt. Mix well.
Chop the mixed dried fruits and nuts into small pieces. Add them to the flour mixture, stirring to evenly distribute the fruit and nuts.
In a separate bowl, whisk together the thickened flax egg, maple syrup, almond milk, and olive oil.
Pour the wet ingredients into the dry ingredients, mixing with a wooden spoon or spatula until a sticky dough forms.
