Ingredients

  • 1 can canned chickpeas, drained and rinsed
  • 1 can canned black beans, drained and rinsed
  • 0.5 cup red onion, finely chopped
  • 2 cloves garlic cloves, minced
  • 2 tablespoons ground flaxseed
  • 5 tablespoons water
  • 0.75 cup breadcrumbs
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon cumin
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 medium avocado, sliced
  • 4 leaves lettuce leaves
  • 1 medium tomato, sliced
  • 4 pieces vegan burger buns
  • 0.25 cup vegan mayo or preferred vegan sauce

Directions

Step 1

In a small bowl, mix the ground flaxseed with 5 tablespoons of water and set aside for a few minutes to create a flax egg.

Step 2

In a large mixing bowl, mash the chickpeas and black beans with a potato masher or fork until well combined but still slightly chunky.

Step 3

Add the chopped red onion, minced garlic, flax egg, breadcrumbs, smoked paprika, cumin, salt, and black pepper to the mashed mixture. Mix thoroughly until everything is well incorporated.

Divide the mixture into 8 equal portions and shape each portion into a patty using your hands or a patty maker.
