Ingredients

  • 1 cup Vital wheat gluten
  • 0.25 cup Chickpea flour
  • 2 tablespoons Nutritional yeast
  • 1 teaspoon Onion powder
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • 0.75 cup Vegetable broth
  • 1 tablespoon Soy sauce
  • 1 tablespoon Olive oil
  • 1 tablespoon Maple syrup
  • 1 tablespoon Rice vinegar
  • 2 cloves Garlic, minced
  • 1 teaspoon Ginger, grated
  • 0.5 teaspoon Chili powder
  • 0.25 teaspoon Black pepper
  • 0.5 cup Barbecue sauce

Directions

Step 1

In a large bowl, combine the vital wheat gluten, chickpea flour, nutritional yeast, onion powder, garlic powder, and paprika.

Step 2

In a separate bowl, mix the vegetable broth and soy sauce together.

Step 3

Pour the liquid mixture into the dry ingredients. Stir well until a dough forms and then knead the dough for about 3-4 minutes until it becomes elastic.

Divide the dough into 8 equal pieces and shape each piece into 'wing' shapes.

In a large pot, bring water to a boil. Add the wings, reduce the heat to low, cover, and simmer for 25 minutes. Remove from heat and let the wings cool.

In a small bowl, whisk together the olive oil, maple syrup, rice vinegar, minced garlic, grated ginger, chili powder, and black pepper to make the marinade.

Place the cooled wings in a shallow dish and pour the marinade over them, making sure each piece is well coated. Cover and refrigerate for at least 1 hour, preferably overnight.
