Ingredients

  • 400 grams Seitan (store-bought or homemade)
  • 1 Red bell pepper
  • 1 Green bell pepper
  • 1 large Red onion
  • 1 medium Zucchini
  • 12 pieces Cherry tomatoes
  • 2 tablespoons Olive oil
  • 3 tablespoons Soy sauce
  • 1 tablespoon Maple syrup
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Garlic powder
  • 0.5 teaspoon Ground black pepper
  • 1 tablespoon Lemon juice
  • 2 tablespoons Fresh parsley (chopped)
  • 0.5 teaspoons Salt
  • 8 Wooden skewers

Directions

Step 1

Soak the wooden skewers in water for at least 30 minutes to prevent burning during grilling.

Step 2

Cut the seitan into 1-inch cubes.

Step 3

Prepare the vegetables: Cut the red and green bell peppers into 1-inch pieces, slice the red onion into thick wedges, and slice the zucchini into thick rounds.

Step 4

In a large mixing bowl, combine olive oil, soy sauce, maple syrup, smoked paprika, garlic powder, ground black pepper, lemon juice, and salt to create the marinade.

Step 5

Add the seitan cubes to the marinade and toss to coat thoroughly. Allow to marinate for at least 15 minutes, stirring occasionally.

Step 6

Preheat your grill or grill pan to medium-high heat.

Step 7

Assemble the kebabs by threading seitan, red bell pepper, green bell pepper, red onion, zucchini, and cherry tomatoes alternately onto the soaked skewers.

Step 8

Grill the kebabs for 10-15 minutes, turning occasionally, until the vegetables are tender and slightly charred, and the seitan is heated through.

Step 9

Remove the kebabs from the grill and sprinkle with fresh chopped parsley before serving.

Step 10

Serve the kebabs hot with your favorite sides.
