Ingredients

  • 2 tablespoons Flaxseed meal
  • 5 tablespoons Water
  • 1 cup All-purpose flour
  • 1/2 cup Cocoa powder
  • 1 teaspoon Baking powder
  • 1/4 teaspoon Salt
  • 1 cup Vegan dark chocolate chips
  • 1/2 cup Coconut oil
  • 1 cup Granulated sugar
  • 2 teaspoons Vanilla extract
  • 1/2 cup Unsweetened almond milk
  • 1/2 cup Chopped nuts (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a mini muffin tin with paper liners or lightly grease it with coconut oil.

Step 2

In a small bowl, combine the flaxseed meal and water. Stir well and set aside for 5 minutes to thicken. This acts as a flax egg replacement.

Step 3

In a large mixing bowl, whisk together the flour, cocoa powder, baking powder, and salt. Set aside.

Using a medium-sized microwave-safe bowl, melt the vegan dark chocolate chips and coconut oil together. Microwave in 30-second intervals, stirring in between, until smooth and fully melted.
