Ingredients

  • 250 g All-purpose flour
  • 7 g Instant yeast
  • 30 g Granulated sugar
  • 1 tsp Salt
  • 180 ml Unsweetened almond milk
  • 30 ml Vegetable oil
  • 1 tsp Vanilla extract
  • 30 g Cornstarch
  • 1 pinch Turmeric (for color)
  • 100 ml Coconut cream

Directions

Step 1

In a large bowl, mix the flour, instant yeast, sugar, and salt together.

Step 2

In a small saucepan, warm the almond milk until lukewarm. Remove from heat and add vegetable oil and vanilla extract.

Step 3

Pour the liquid ingredients into the dry ingredients and mix until a dough forms.

Step 4

Knead the dough on a lightly floured surface for about 8-10 minutes until smooth and elastic.

Step 5

Place the dough back into a lightly oiled bowl, cover it, and let it rise in a warm place for about 1 hour or until doubled in size.

Step 6

Meanwhile, prepare the custard filling. In a small saucepan, whisk together the cornstarch, sugar, and a pinch of turmeric.

Gradually add the coconut cream and remaining almond milk, whisking continuously to avoid lumps.

Place the saucepan over medium heat and cook the mixture while whisking constantly until it thickens to a custard consistency. Remove from heat and let it cool completely.

Once the dough has risen, punch it down and divide it into 8 equal pieces.

Flatten each piece into a circle and place about 1 tablespoon of custard in the center.

Fold the edges of the dough over the custard, pinching to seal and form a smooth bun.

Arrange the buns on a baking sheet lined with parchment paper, cover, and let them rise for another 30 minutes.

Preheat your oven to 180°C (350°F).

Bake the custard buns for 12-15 minutes, or until they are lightly golden.
