Ingredients

  • 1 small head Red cabbage
  • 2 medium Carrot
  • 1 medium Red bell pepper
  • 4 stalks Green onion
  • 0.5 cup Fresh cilantro
  • 0.5 cup Raw cashews
  • 3 tablespoons Lime juice
  • 2 tablespoons Extra-virgin olive oil
  • 1 tablespoon Maple syrup
  • 1 tablespoon Soy sauce
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Sea salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Remove the outer leaves of the red cabbage, then cut it into quarters and remove the core. Thinly slice the cabbage quarters into fine strips and place them in a large mixing bowl.

Step 2

Peel the carrots and grate them using a box grater or food processor. Add the grated carrots to the bowl with the cabbage.
