In a large mixing bowl, combine the flour, sugar, salt, and instant yeast.
Warm the plant-based milk slightly and add it to the dry ingredients. Mix until a dough forms.
Knead the dough for about 10 minutes until it's smooth and elastic. Cover it with a damp cloth and let it rise for an hour in a warm place.
Roll out the dough into an elongated rectangle on a lightly floured surface.
Place the vegan butter between two pieces of parchment paper and roll it into a thin, flat sheet that covers half of the dough.
Position the rolled-out vegan butter on one half of the dough and fold the other half over it, sealing the edges tightly.
Roll out the dough again into a rectangular shape. Fold it into thirds, like a letter, and wrap it in plastic wrap. Let it rest in the refrigerator for 30 minutes.
Repeat the rolling and folding process twice more, allowing the dough to rest for 30 minutes in the refrigerator each time.
Preheat the oven to 200°C (392°F) and line a baking sheet with parchment paper.
Roll out the dough into a large rectangle about 5mm thick. Cut the dough into 8 long triangles.
Place a slice of vegan ham and vegan cheese at the wide end of each triangle.
Roll each triangle from the wide end to the pointed end to form croissant shapes.
Place the rolled croissants on the prepared baking sheet.
Brush the croissants with aquafaba to help them brown nicely.
Bake in the preheated oven for 18-20 minutes or until they are golden brown and flaky.
