Ingredients

  • 1 cup red lentils
  • 2 cups water
  • 1 small onion
  • 2 garlic cloves
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon chili powder
  • 0.5 cup fresh cilantro
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 3 tablespoons olive oil
  • 0.5 cup chickpea flour
  • 1 teaspoon baking powder

Directions

Step 1

Rinse the red lentils under cold water until the water runs clear. Drain and place them in a medium-sized pot.

Step 2

Add 2 cups of water to the pot and bring to a boil over medium-high heat. Reduce the heat and simmer for about 10-12 minutes, or until the lentils are tender. Drain any excess water and set aside to cool slightly.

While the lentils are cooking, finely chop the onion and mince the garlic cloves.

In a large mixing bowl, combine the cooked lentils, chopped onion, minced garlic, ground cumin, ground coriander, smoked paprika, chili powder, salt, and black pepper. Mix well to combine.
