Ingredients

  • 200 grams quinoa
  • 500 milliliters water
  • 200 grams chickpeas
  • 3 stalks green onion
  • 2 garlic cloves
  • 2 tablespoons ground flaxseed
  • 6 tablespoons water (for flax egg)
  • 100 grams breadcrumbs
  • 3 tablespoons nutritional yeast
  • 1 tablespoon lemon juice
  • 1 teaspoon cumin powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil

Directions

Step 1

Rinse the quinoa under cold water thoroughly. In a medium saucepan, combine the quinoa with 500 milliliters of water. Bring to a boil, then reduce the heat to low, cover, and let it simmer for 15 minutes until the water is absorbed. Remove from heat and set aside to cool.

Step 2

While the quinoa is cooking, prepare the flax egg by mixing the ground flaxseed with 6 tablespoons of water in a small bowl. Let it sit for about 5 minutes until it thickens.

Step 3

Drain and rinse the chickpeas. In a large mixing bowl, mash the chickpeas with a fork or potato masher, leaving some chunks for texture.

Step 4

Chop the green onions finely and mince the garlic cloves. Add them to the mixing bowl with the chickpeas.

Add the cooled quinoa, thickened flax egg, breadcrumbs, nutritional yeast, lemon juice, cumin powder, smoked paprika, salt, and black pepper to the bowl. Mix everything thoroughly until well combined.

Preheat the oven to 200°C (400°F). Line a baking sheet with parchment paper.

Form the mixture into small bite-sized balls or patties, about 1-2 tablespoons each, and place them on the prepared baking sheet.

Brush the tops of the quinoa bites with olive oil to help them crisp up in the oven.

Bake in the preheated oven for 20-25 minutes, flipping halfway through the cooking time, until they are golden brown and crispy.
