Ingredients

  • 12 sheets Rice paper wrappers
  • 200 grams Vegan minced pork
  • 1 cup Cabbage
  • 1 medium Carrot
  • 1 cup Bean sprouts
  • 2 stalks Green onion
  • 2 cloves Garlic
  • 2 tablespoons Soy sauce
  • 1 tablespoon Sesame oil
  • 1 teaspoon Ginger
  • 1 tablespoon Cornstarch
  • 1 cup Vegetable oil
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Finely shred the cabbage and carrots. Thinly slice the green onions, mince the garlic cloves, and grate the ginger.

Step 2

In a large bowl, mix the shredded cabbage, carrots, bean sprouts, and green onions with the vegan minced pork, minced garlic, grated ginger, soy sauce, sesame oil, cornstarch, salt, and pepper.

Step 3

Place a rice paper wrapper into warm water for about 10 seconds until it starts to soften. Lay the wrapper flat on a clean surface.

Step 4

Spoon 2 tablespoons of the vegetable and vegan pork mixture onto the bottom third of the wrapper.

Step 5

Fold the bottom of the wrapper over the filling, fold in the sides, and then roll up tightly, making sure to seal the edges. Repeat with the remaining wrappers and filling.

Step 6

In a deep pan or wok, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Step 7

Carefully place several spring rolls into the hot oil, ensuring not to overcrowd the pan. Fry for about 3 minutes on each side, or until they are golden brown and crispy.

Step 8

Remove the spring rolls using a slotted spoon and drain them on paper towels to remove excess oil.
