Drain the tofu and wrap it in a clean kitchen towel. Press it gently to remove excess moisture, then crumble the tofu into a large mixing bowl.
Add the grated carrot, chopped green onions, minced garlic, grated ginger, chopped mushrooms, and shredded cabbage to the bowl with the tofu. Mix well.
Season the mixture with soy sauce, sesame oil, salt, and black pepper. Stir until all ingredients are evenly combined.
