Ingredients

  • 14 ounces Canned artichoke hearts (halved)
  • 1 cup All-purpose flour
  • 2 tablespoons Cornstarch
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • 0.5 teaspoon Black pepper
  • 1 cup Cold sparkling water
  • 2 cups Vegetable oil
  • 1 whole Lemon wedges
  • 2 tablespoons Chopped fresh parsley

Directions

Step 1

Drain the canned artichoke hearts and pat them dry with a paper towel. Halve them if they are not already halved.

Step 2

In a large bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, garlic powder, paprika, and black pepper.

Gradually add the cold sparkling water to the flour mixture, whisking until smooth to form a batter. The batter should be slightly thick but remain pourable.

Heat the vegetable oil in a deep saucepan or a fryer to 350°F (175°C).
