Ingredients

  • 2 pounds Yukon Gold potatoes
  • 1 cup Unsweetened almond milk

  • 2 cloves Garlic, minced
  • 3 tablespoons Nutritional yeast

  • 0.5 teaspoon Ground black pepper
  • 2 tablespoons Fresh chives, chopped
  • 1 tablespoon Olive oil

Directions

Step 1

Peel the Yukon Gold potatoes and cut them into evenly-sized chunks (about 1-2 inches).

Step 2

Place the potato chunks in a large pot and cover them with water. Add a pinch of salt to the water.

Bring the pot to a boil over high heat. Once boiling, reduce the heat to medium-low and let the potatoes simmer for 20-25 minutes, or until they are tender when pierced with a fork.
