  • 4 medium apples
  • 0.25 cup water
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice

Directions

Step 1

In a medium saucepan, combine the soy milk and agar-agar powder. Whisk to dissolve the agar-agar.

Place the saucepan over medium heat and bring to a simmer, stirring regularly. Cook for 5 minutes, until the agar-agar is completely dissolved.

Remove from heat and let it cool to around 110°F (43°C), slightly warmer than room temperature.

Open the probiotic capsules and stir the contents into the soy milk mixture along with the maple syrup.

Transfer the mixture to a clean glass jar or yogurt maker, cover with a clean cloth or lid, and let it sit undisturbed in a warm location for 8–12 hours to ferment.

Once the yogurt is tangy to your liking, refrigerate to set further and chill for at least 4 hours before serving.
