  • 2 celery stalks
  • 1 large potato
  • 1 medium zucchini
  • 1 cup broccoli
  • 5 cups vegetable broth
  • 1 cup coconut milk
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons nutritional yeast

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Chop the onion, mince the garlic, and add them to the pot. Sauté for about 5 minutes until the onion is translucent.
