Ingredients

  • 500 grams fresh spinach
  • 400 milliliters coconut milk
  • 3 tablespoons nutritional yeast
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1 onion, finely chopped
  • 1 tablespoon lemon juice
  • 0.25 teaspoon ground nutmeg
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Wash the fresh spinach thoroughly and set it aside to drain.

Step 2

In a large pan over medium heat, add the olive oil.

Step 3

Once the oil is hot, add the chopped onion and minced garlic. Sauté for 3-4 minutes or until the onion turns translucent.

Step 4

Add the spinach to the pan and cook until wilted, about 5 minutes.

Reduce the heat to low and pour in the coconut milk. Stir to combine.
