Ingredients

  • 1 cup long-grain white rice
  • 1 can (13.5 oz) coconut milk
  • 1 cup vegetable broth
  • 1 medium, chopped onion
  • 3 cloves, minced garlic
  • 2 tablespoons olive oil
  • 2 tablespoons nutritional yeast
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 cup frozen peas
  • 1 tablespoon lemon juice
  • 2 tablespoons, chopped fresh parsley

Directions

Step 1

Rinse the rice under cold water until the water runs clear. Drain well.

Step 2

In a large saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until it becomes translucent.

Add the minced garlic and sauté for another minute until fragrant.
