  • 1 medium Potato

  • 0.25 teaspoon Cayenne pepper
  • 1 tablespoon Lemon juice
  • 2 teaspoons Apple cider vinegar
  • 1 teaspoon Salt
  • 1 cup Water
  • 2 cups Hot water (for soaking)

Directions

Step 1

Place the raw cashews in a small bowl and cover them with 2 cups of hot water. Let them soak for at least 15 minutes to soften.

Meanwhile, peel and dice the carrot and potato into small chunks.

Step 3

Place the diced carrot and potato into a medium saucepan and cover them with water. Bring to a boil over medium-high heat, reduce the heat to medium, and simmer until fork-tender, about 10-12 minutes.
