Ingredients

  • 4 large sweet potatoes
  • 0.5 cups unsweetened almond milk
  • 3 tablespoons vegan butter
  • 1 tablespoon maple syrup
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Peel the sweet potatoes and chop them into evenly sized chunks, approximately 1-inch pieces, to ensure even cooking.

Step 2

Place the sweet potato chunks into a large pot and cover them with water. Add a pinch of salt to the water for flavor.

Step 3

Bring the water to a boil over medium-high heat, then reduce the heat to medium and let the sweet potatoes simmer for about 20-25 minutes, or until they are tender and can be easily pierced with a fork.

Step 4

While the sweet potatoes are cooking, warm the almond milk in a small saucepan over low heat, or microwave it for about 30 seconds, to prevent chilling the potatoes when mixing.

Step 5

Once the sweet potatoes are tender, drain them well and return them to the pot. Allow them to sit for a few moments to allow any excess moisture to escape.

Step 6

Add the warm almond milk, vegan butter, maple syrup, ground cinnamon, ground nutmeg, sea salt, and black pepper to the pot with the drained sweet potatoes.

Step 7

Using a potato masher or an electric hand mixer, mash the sweet potatoes until smooth and creamy, adjusting the seasoning to taste.

Step 8

Serve immediately, garnishing with additional cinnamon or a sprig of fresh herbs if desired.
