Ingredients

  • 2 large fresh ripe mangoes
  • 2 cups vegan coconut yogurt
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup granola
  • 2 tablespoons chia seeds
  • 1 tablespoon coconut flakes
  • 10 small mint leaves

Directions

Step 1

Peel and pit the mangoes. Dice one mango into small cubes and set aside for topping.

Step 2

Cut the other mango into larger pieces and place in a blender.

Step 3

To the blender, add 1 tablespoon of maple syrup and blend until smooth to make a mango puree. Set aside.

Step 4

In a bowl, mix the coconut yogurt with 1 tablespoon of maple syrup and vanilla extract until well combined. Stir in the chia seeds and let it sit for 10 minutes to thicken.

To assemble the parfaits, take four glasses or dessert cups. Start by adding a layer of the mango puree at the bottom of each glass.
