Ingredients

  • 2 pounds Russet potatoes
  • 6 Garlic cloves
  • 2 tablespoons Olive oil
  • 1 cup Unsweetened almond milk
  • 1 tablespoon Vegan butter
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Chopped fresh parsley

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Place the garlic cloves on a piece of aluminum foil, drizzle with 1 tablespoon of olive oil, and wrap them to create a sealed packet.

Roast the garlic in the preheated oven for about 20-25 minutes, or until the cloves are soft and golden brown.

While the garlic is roasting, peel and chop the potatoes into 1-inch cubes.
