  • 4 cups frozen corn kernels
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 1 tablespoon nutritional yeast
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons chives, chopped

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Add the diced onion and sauté for 5 minutes until translucent.

Step 3

Add minced garlic and continue to cook for another minute until fragrant.

Stir in the diced potatoes and cook for 5 minutes, stirring occasionally.
