Ingredients

  • 6 cups chopped carrots
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 tablespoon grated fresh ginger
  • 1 tablespoon maple syrup
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup chopped for garnish fresh cilantro

Directions

Step 1

In a large pot, heat the olive oil over medium heat.

Step 2

Add the chopped onion and garlic to the pot, sauté for 5 minutes until the onion is translucent.

Step 3

Add the chopped carrots to the pot and cook for 5 more minutes, stirring occasionally.

Step 4

Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to a simmer and cook for 20 minutes, until the carrots are tender.
