  • 1 large potato
  • 120 ml unsweetened almond milk

  • 2 tablespoons olive oil
  • 2 garlic cloves
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon lemon juice

Directions

Step 1

Begin by washing the broccoli florets thoroughly under running water. Peel and chop the potato into 1-inch cubes.

Step 2

In a large pot, bring water to a boil and add a pinch of salt. Add the potato cubes and cook for 5 minutes.

Step 3

After 5 minutes, add the broccoli florets into the same pot and continue to cook until both the potatoes and broccoli are tender, about 10 more minutes.

While the vegetables are cooking, peel and mince the garlic cloves.
