Ingredients

  • 3 medium beetroots
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 tablespoons tahini
  • 2 tablespoons lemon juice
  • 1 garlic clove
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon ground coriander
  • 2 tablespoons water
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Wash the beetroots thoroughly and wrap each one in aluminum foil.

Step 3

Place the wrapped beetroots on a baking sheet and roast in the oven for 40-45 minutes, or until they are tender and a fork can easily pierce them.

Once cooked, remove the beetroots from the oven, unwrap them, and let them cool slightly.
