Ingredients

  • 2 pounds Yukon Gold potatoes
  • 2 tablespoons Olive oil
  • 3 Garlic cloves, minced
  • 1 medium Onion, finely chopped
  • 1.5 cups Unsweetened almond milk
  • 3 tablespoons Nutritional yeast
  • 2 tablespoons Cornstarch
  • 1 teaspoon Fresh thyme leaves
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Chopped fresh parsley

Directions

Step 1

Peel and cut the potatoes into 1-inch cubes.

Step 2

Boil a large pot of water, add a pinch of salt, and then add the potatoes. Cook until just tender, about 10-12 minutes.

While the potatoes are cooking, heat olive oil in a medium saucepan over medium heat.

Add minced garlic and chopped onion to the saucepan. Sauté until the onion becomes translucent, about 5 minutes.
