Ingredients

  • 2 tablespoons olive oil
  • 1 medium, chopped yellow onion
  • 3 minced garlic cloves
  • 4 cups vegetable broth
  • 8 cups, packed fresh spinach
  • 1 can (13.5 oz) canned coconut milk
  • 3 tablespoons nutritional yeast
  • 1 tablespoon lemon juice
  • 1 teaspoon, or to taste salt
  • 0.5 teaspoon, or to taste black pepper
  • 0.25 teaspoon nutmeg
  • 0.5 cup, chopped fresh basil leaves

Directions

Step 1

Heat olive oil in a large pot over medium heat.

Step 2

Add the chopped onion and sauté for about 5 minutes, or until the onion is translucent.

Step 3

Stir in the minced garlic and cook for an additional 1 minute until fragrant.

Step 4

Pour the vegetable broth into the pot and bring it to a boil.

Step 5

Add the fresh spinach to the pot and cook until the spinach is wilted, about 3 minutes.

Step 6

Stir in the coconut milk and nutritional yeast, and reduce heat to a simmer.

Step 7

Simmer the soup for about 10 minutes to allow the flavors to meld.

Step 8

Remove the pot from heat and let the mixture cool slightly.

Step 9

Use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup in batches to a blender and carefully blend until smooth, then return it to the pot.

Step 10

Stir in the lemon juice, salt, black pepper, nutmeg, and chopped basil leaves.

Step 11

Taste and adjust seasoning if necessary.

Step 12

Reheat the soup gently if needed, then serve hot.
