  • 5 cups Broccoli florets

  • 3 minced Garlic cloves
  • 4 cups Vegetable broth
  • 1 cup Coconut milk (unsweetened, full-fat)
  • 2 tablespoons Olive oil
  • 2 tablespoons Nutritional yeast
  • 1 teaspoon (adjust to taste) Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon (freshly squeezed) Lemon juice

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the chopped onion, celery, carrot, and garlic to the pot. Sauté for 5–7 minutes until the vegetables are softened and fragrant.

Add the broccoli florets to the pot and cook for an additional 3 minutes, stirring occasionally.
