Ingredients

  • 250 grams All-purpose flour
  • 150 milliliters Coconut milk
  • 50 grams Coconut oil, melted
  • 7 grams Instant yeast
  • 50 grams Brown sugar
  • 1 teaspoon Salt
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Instant coffee powder
  • 50 grams Powdered sugar
  • 30 grams Vegan butter
  • 1 teaspoon Ground cinnamon

Directions

Step 1

In a small bowl, dissolve 1 tablespoon of the brown sugar and the instant yeast in 150 ml of warm coconut milk. Let it sit for about 5-10 minutes until frothy.

Step 2

In a large mixing bowl, combine flour and salt. Pour the yeast mixture into the flour, add 30 grams of melted coconut oil, and vanilla extract. Mix until a dough begins to form.

Step 3

Knead the dough on a floured surface for about 10 minutes until smooth and elastic. Place the dough in a lightly greased bowl, cover, and let it rise in a warm place for about 1 hour or until doubled in size.

Step 4

While the dough is rising, prepare the coffee topping. In a medium bowl, cream together the remaining coconut oil, powdered sugar, and remaining brown sugar. Add the instant coffee powder, ground cinnamon, and mix until smooth. Set aside.

Step 5

Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a ball and place them on a baking sheet lined with parchment paper.

Using a piping bag fitted with a medium round tip, pipe spiral rings of the coffee topping over each bun, covering the top of the dough.

Preheat your oven to 180°C (350°F). Let the buns rest for an additional 10-15 minutes while the oven heats up.
