Ingredients

  • 8 sheets Frozen phyllo pastry sheets
  • 2 medium Potatoes
  • 0.5 cup Frozen peas
  • 1 medium Onion
  • 1 inch piece Ginger
  • 2 cloves Garlic cloves
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Coriander powder
  • 0.5 teaspoon Garam masala
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Red chili powder
  • 1 teaspoon Salt
  • 2 tablespoons Cilantro
  • 2 tablespoons Vegetable oil
  • 0.25 cup Water
  • 2 tablespoons Vegan butter or margarine

Directions

Step 1

Boil the potatoes with their skins on until tender. Once cooked, peel and mash them. Set aside.

Step 2

Finely chop the onion, garlic, ginger, and cilantro.

Step 3

In a pan, heat 2 tablespoons of vegetable oil over medium heat. Add cumin seeds and let them sizzle for a few seconds.

Add the chopped onions, garlic, and ginger. Sauté until the onions are translucent.

Step 5

Stir in the coriander powder, garam masala, turmeric powder, and red chili powder.

Step 6

Add the mashed potatoes, peas, salt, and a quarter cup of water. Cook for about 5 minutes, stirring occasionally.

Step 7

Mix in the chopped cilantro and turn off the heat. Let the filling cool completely.

Preheat the oven to 375°F (190°C).

Melt the vegan butter or margarine and set aside.

On a clean surface, lay a phyllo pastry sheet and cut it into strips about 2 inches wide.

Brush each strip lightly with the melted vegan butter.

Place about 1 tablespoon of filling at the end of each strip, then fold the pastry over the filling to form a triangle. Continue folding the strip in a triangular shape until you reach the end.

Place the folded samosas on a baking sheet lined with parchment paper.

Repeat with remaining pastry strips and filling.

Brush the tops of the samosas with a little more melted vegan butter.

Bake in the preheated oven for 15-20 minutes, or until golden brown and crispy.

Serve hot with your favorite chutney or sauce.
