  • 4 pieces Large whole wheat tortillas
  • 2 cups Romaine lettuce
  • 1 cup Cherry tomatoes
  • 1 piece Cucumber
  • 1 piece Avocado
  • 1 cup Chickpeas
  • 0.5 cup Vegan bacon bits
  • 0.5 piece Red onion
  • 0.5 cup Vegan ranch dressing
  • 2 tablespoons Lemon juice
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Rinse and chop the romaine lettuce into bite-sized pieces.

Step 2

Halve the cherry tomatoes.

Step 3

Peel the cucumber if desired, then slice it into thin rounds.

Step 4

Cut the avocado in half, remove the pit, and cube the flesh.

Step 5

Rinse and drain the chickpeas. Optionally, you can roast them for added crunch.

Thinly slice half of the red onion.
