Ingredients

  • 2 medium Red apple
  • 1 medium Green apple
  • 3 large Celery stalks
  • 1 cup Red grapes
  • 1 cup Yellow grapes
  • 1 cup Walnuts
  • 2 tablespoons Lemon juice
  • 1 cup Vegan mayonnaise
  • 1 tablespoon Maple syrup
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Fresh parsley
  • 4 large Bib lettuce leaves

Directions

Step 1

Wash the apples thoroughly. Core and chop the red and green apples into bite-sized pieces, leaving the skin on for added fiber and color.

Step 2

Place the chopped apples in a large mixing bowl. Immediately drizzle with lemon juice to prevent browning and toss gently to coat.

Step 3

Rinse the celery stalks, then chop them into small slices. Add them to the mixing bowl with the apples.

Step 4

Rinse the red and yellow grapes. Halve them and add to the mixing bowl with the other ingredients.
