  • 2 sheets Vegan puff pastry sheets
  • 500 ml Unsweetened almond milk
  • 200 ml Coconut cream
  • 100 g Cornstarch
  • 150 g Granulated sugar
  • 1 tablespoon Vanilla extract
  • 0.25 teaspoon Turmeric (for color)
  • 50 g Icing sugar
  • 2 tablespoons Water

Directions

Step 1

Preheat your oven to 200°C (390°F).

Step 2

Place the vegan puff pastry sheets on a lined baking sheet and prick them all over with a fork to prevent puffing.

Step 3

Bake the pastry sheets in the preheated oven for 10-15 minutes or until golden brown. Remove from the oven and allow to cool completely on a wire rack.

In a medium saucepan, whisk together the almond milk, coconut cream, sugar, and turmeric over medium heat. Bring this mixture to a gentle simmer.

In a small bowl, mix the cornstarch with a few tablespoons of almond milk to create a smooth slurry. Once the milk mixture is simmering, gradually whisk in the cornstarch slurry and continue stirring until thickened, about 5-7 minutes.

Remove the saucepan from the heat and stir in the vanilla extract. Let the mixture cool slightly.
