Ingredients

  • 0.5 cup Coconut oil, solid
  • 0.75 cup Granulated sugar
  • 0.25 cup Brown sugar
  • 0.25 cup Non-dairy milk (such as almond or soy milk)
  • 2 teaspoons Pure vanilla extract

Directions

Step 1

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

Step 2

In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Set aside.

Step 3

In a large mixing bowl, beat the solid coconut oil using a hand mixer or stand mixer until smooth.

Add the granulated sugar and brown sugar to the coconut oil and beat on medium speed until the mixture is fluffy, about 2-3 minutes.
