Ingredients

  • 1 cup Yellow cornmeal
  • 0.5 cup All-purpose flour
  • 1.5 teaspoons Baking powder
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.5 cup Onion, finely chopped
  • 0.75 cup Unsweetened almond milk
  • 1 tablespoon Apple cider vinegar
  • 1 tablespoon Maple syrup
  • 2 cups Vegetable oil, for frying

Directions

Step 1

In a small bowl, mix the unsweetened almond milk with the apple cider vinegar. Set aside to let it curdle for about 5 minutes, creating a vegan buttermilk substitute.

Step 2

In a large mixing bowl, combine the yellow cornmeal, all-purpose flour, baking powder, garlic powder, salt, and black pepper. Mix well.

Step 3

Add the chopped onion to the dry ingredients and stir to distribute evenly.

Step 4

Pour the vegan buttermilk and maple syrup into the dry mixture. Stir until just combined. Do not overmix; the batter should be thick.

Step 5

In a heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C). The oil should be deep enough to fully submerge the hushpuppies.

Step 6

Using a tablespoon or a small ice cream scoop, drop rounded spoonfuls of batter into the hot oil. Fry in batches to avoid overcrowding, cooking for about 2-3 minutes per side or until golden brown.

Step 7

Once fried, remove the hushpuppies from the oil using a slotted spoon and drain on a plate lined with paper towels.

Step 8

Serve warm as a delightful side dish or appetizer.
