Ingredients

  • 1 cup Raw cashews
  • 0.5 cup Water
  • 2 tablespoons Lemon juice
  • 1 tablespoon Apple cider vinegar
  • 1 tablespoon Nutritional yeast
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Onion powder
  • 0.5 teaspoon Salt

Directions

Step 1

Place the raw cashews in a bowl and cover with water. Allow them to soak for at least 2 hours, preferably overnight. This softens them for easy blending.

Step 2

Once the cashews have soaked, drain and rinse them well.

Step 3

In a high-speed blender, combine the soaked cashews, 0.5 cup water, lemon juice, apple cider vinegar, nutritional yeast, Dijon mustard, garlic powder, onion powder, and salt.

Step 4

Blend the mixture on high speed for about 2 to 3 minutes, until it is completely smooth and creamy. You may need to stop and scrape down the sides of the blender a couple of times.

Taste and adjust seasoning if necessary, adding more salt or lemon juice if you prefer a tangier flavor.

Transfer the sour cream sauce to a jar or airtight container. It can be served immediately or chilled in the refrigerator for at least 30 minutes to thicken.
